Homemade Tomato Soup

It is fall, and time for soup!  Tomato soup and grilled cheese sandwiches have long been a favorite meal for our family, and we traditionally used Campbell’s.  Hey, easy meal, right?

Then we started going healthy, and the list of things in the canned soup made me shudder.  Did you know that it is easy, I mean really easy, to make your own soup?

The first step is to make a roux.   This is a simple base for all creamed soups and sauces.  Melt 1 tablespoon of fat (I use coconut oil, butter is fine, too) in a saucepan.  Sprinkle 1 tablespoon of flour over the top, and heat until the flour is lightly browned.  Then add a bit of milk, and stir until the lumps are gone, then add more milk until you’ve added about a cup or so.  If you like a thicker soup, use more fat and flour.  You can make this gluten and dairy free, just use an alternate flour and milk.

Make a roux for sauces or thick soups.

Next, mix in a can of tomato sauce.  We like Muir Glen because they use tomatoes that are actually ripe.  It’s a bit of a splurge, but I think it is worth it.  If you use store brand, be sure to check the ingredients, some have added salt, some don’t.

Finally, you can season how you like.  Add basil, black pepper, or other spices.  I don’t need salt in mine, but my husband likes a little in his, so he adds it at the table.  Heat until nearly simmering, stirring often.  Voila, a really easy and healthy dish!Homemade Tomato Soup
